3D scanning of the spiral freezer – in the service of freshness

Can precision measurements have anything to do with baked goods? Yes – and more than you might think! Our latest project shows how modern metrology supports the food industry, specifically the process of freezing baked goods in specialized spiral freezers.

What is a spiral freezer?

This is an advanced device in which food products – such as bread and confectionery – are transported along a spiral conveyor belt and subjected to rapid freezing. This design makes the device very efficient, but it is also complex in design, making traditional measurements and inspections difficult.

How did we take the measurements?

The FARO Focus 3D laser scanner played a key role in this project, allowing the collection of highly accurate geometric data even in hard-to-reach areas of the freezer.
The process took place in three stages:

  1. Data collection – full scanning of both levels of the spiral freezer, divided into 12 columns and a dozen runner heights in each column.

  2. Data processing – that is, processing: removal of noise, elimination of duplicate points, registration of data into a single object, mathematical matching of whole clouds, separation of intervening fragments, transfer of data to the required coordinate system, etc.
  3. Distance analysis – measurements were taken at three points on each crossbeam (beginning, middle, end), determining the distance between the conveyor raceway and the beam.

Results and effect for the customer

We prepared a detailed report with a distance map, in which we identified specific locations with incorrect dimensions. In some locations, the measurements showed a clearance of less than the required 90 mm, which could lead to collisions between treadmill components and the support structure.

With this information, the customer was able to start the warranty procedure, eliminating the risk of failure without having to stop production.
